Favorite Mustard varieties:

Wiedigers like Seeds of Change’s Purple Wave (looks like a mottled green wave) It is gorgeous-- so different in color. But does not like the cold of the winter and high tunnels. Put it in green mustard bunches- makes it look like a floral bouquet. Can’t afford to use it as a mesclun item. They had to reduce spiciness of mix.

Cathy sells a lot of Red Giant and Green Wave to a restaurant. $6/lb (Same as arugula). Cathy’s chef buys it large as well as small.

Nicolas likes Red Giant too.
