Organic Farmer Network: Network Discussion Summary

Topic: Cabbage

Favorite Cabbage varieties:

Charlie and others like Early Jersey Wakefield, but it will split.

The Wiedigers like Capricorn.  It has a good pointy head.  It holds in the field, with no splitting as it gets heavier.  Alison’s grandmother used it for cole slaw

Primax is Ken’s choice

Storage # 4 is Ellen’s choice.  It heads all of a sudden at the very end of season.  It makes beautiful tight heads -- perfect size and shape -- 2-3 lb heads.  It is really good for storage.

Nicolas really likes Savoy and the chefs really love it.  He gets $3/head for them.  They don’t weigh as much as a denser variety.

Ken and Charlie like Super Red 80.

Ken also likes Red Express and Blues Chinese cabbage.

Cathy likes Regal Express and Minuet Chinese cabbage.
